B\u00e0i vi\u1ebft n\u00e0y t\u1ed5ng h\u1ee3p \u0111\u1ea7y \u0111\u1ee7 c\u00e1c ti\u00eau chu\u1ea9n v\u1ec7 sinh an to\u00e0n th\u1ef1c ph\u1ea9m (ATTP) \u00e1p d\u1ee5ng cho thi\u1ebft b\u1ecb Inox trong nh\u00e0 b\u1ebfp, k\u00e8m h\u01b0\u1edbng d\u1eabn tri\u1ec3n khai th\u1ef1c t\u1ebf t\u1ea1i Vi\u1ec7t Nam.<\/p>\n<h2 id=\"toc-0-khung-quy-dinh-va-tieu-chuan-ap-dung\">Khung quy \u0111\u1ecbnh v\u00e0 ti\u00eau chu\u1ea9n \u00e1p d\u1ee5ng<\/h2>\n<p>&#8211; Vi\u1ec7t Nam:<br \/>\n  &#8211; Lu\u1eadt An to\u00e0n th\u1ef1c ph\u1ea9m 2010 v\u00e0 c\u00e1c v\u0103n b\u1ea3n h\u01b0\u1edbng d\u1eabn (v\u00ed d\u1ee5: Ngh\u1ecb \u0111\u1ecbnh 15\/2018\/N\u0110-CP) y\u00eau c\u1ea7u v\u1eadt li\u1ec7u ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m ph\u1ea3i an to\u00e0n, d\u1ec5 l\u00e0m s\u1ea1ch, kh\u00f4ng g\u00e2y \u00f4 nhi\u1ec5m th\u1ee9 c\u1ea5p.<br \/>\n  &#8211; Th\u1ef1c t\u1ebf, nhi\u1ec1u b\u1ebfp \u00e1p d\u1ee5ng h\u1ec7 th\u1ed1ng qu\u1ea3n l\u00fd an to\u00e0n th\u1ef1c ph\u1ea9m theo HACCP\/ISO 22000 \u0111\u1ec3 ki\u1ec3m so\u00e1t \u0111\u1ed3ng b\u1ed9 thi\u1ebft b\u1ecb, v\u1eadt li\u1ec7u v\u00e0 v\u1ec7 sinh.<br \/>\n&#8211; Qu\u1ed1c t\u1ebf (tham chi\u1ebfu khuy\u1ebfn ngh\u1ecb, \u0111\u01b0\u1ee3c ng\u00e0nh c\u00f4ng nghi\u1ec7p \u1ea9m th\u1ef1c \u2013 ch\u1ebf bi\u1ebfn th\u1ef1c ph\u1ea9m s\u1eed d\u1ee5ng r\u1ed9ng r\u00e3i):<br \/>\n  &#8211; EU: Regulation (EC) No 1935\/2004 v\u1ec1 v\u1eadt li\u1ec7u ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m; Council of Europe Resolution CM\/Res(2013)9 v\u1ec1 kim lo\u1ea1i &#038; h\u1ee3p kim d\u00f9ng trong FCM (\u0111\u01b0a ra nguy\u00ean t\u1eafc gi\u1edbi h\u1ea1n gi\u1ea3i ph\u00f3ng kim lo\u1ea1i v\u00e0 ph\u01b0\u01a1ng ph\u00e1p th\u1eed).<br \/>\n  &#8211; Hoa K\u1ef3: FDA Food Code 2022 (m\u1ee5c 4-101.11) n\u00eau y\u00eau c\u1ea7u v\u1eadt li\u1ec7u ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m ph\u1ea3i tr\u01a1, kh\u00f4ng \u0103n m\u00f2n, kh\u00f4ng th\u1ea5m h\u00fat; ti\u00eau chu\u1ea9n NSF\/ANSI 51 cho v\u1eadt li\u1ec7u thi\u1ebft b\u1ecb ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m.<br \/>\n  &#8211; Ti\u00eau chu\u1ea9n ng\u00e0nh: EN 10088 (th\u00e0nh ph\u1ea7n m\u00e1c th\u00e9p kh\u00f4ng g\u1ec9), ISO 14159 (y\u00eau c\u1ea7u v\u1ec7 sinh cho thi\u1ebft k\u1ebf m\u00e1y), EN 1672-2 (y\u00eau c\u1ea7u v\u1ec7 sinh cho thi\u1ebft b\u1ecb ch\u1ebf bi\u1ebfn th\u1ef1c ph\u1ea9m), EHEDG Guidelines v\u00e0 3-A Sanitary Standards (thi\u1ebft k\u1ebf v\u1ec7 sinh c\u1ea5p \u0111\u1ed9 cao), ASTM A967\/A967M (th\u1ee5 \u0111\u1ed9ng h\u00f3a b\u1ec1 m\u1eb7t Inox).<br \/>\n&#8211; Th\u1ef1c thi t\u1ea1i b\u1ebfp: D\u00f9 kh\u00f4ng b\u1ecb b\u1eaft bu\u1ed9c ph\u1ea3i theo t\u1ea5t c\u1ea3 ti\u00eau chu\u1ea9n qu\u1ed1c t\u1ebf, vi\u1ec7c l\u1ea5y c\u00e1c chu\u1ea9n n\u00e0y l\u00e0m m\u1ed1c gi\u00fap doanh nghi\u1ec7p d\u1ec5 ch\u1ee9ng minh tu\u00e2n th\u1ee7, h\u1ea1n ch\u1ebf r\u1ee7i ro vi ph\u1ea1m ATTP v\u00e0 gi\u1ea3m chi ph\u00ed v\u1eadn h\u00e0nh d\u00e0i h\u1ea1n.<\/p>\n<h2 id=\"toc-1-tieu-chi-vat-lieu-inox-cho-tiep-xuc-thuc-pham\">Ti\u00eau ch\u00ed v\u1eadt li\u1ec7u Inox cho ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m<\/h2>\n<h3>Ch\u1ecdn m\u00e1c Inox ph\u00f9 h\u1ee3p<\/h3>\n<p>&#8211; AISI 304\/304L: L\u1ef1a ch\u1ecdn ph\u1ed5 bi\u1ebfn nh\u1ea5t cho b\u1ed3n, b\u00e0n, ch\u1eadu r\u1eeda, k\u1ec7, m\u00e1ng\u2026 Kh\u00e1ng \u0103n m\u00f2n t\u1ed1t trong m\u00f4i tr\u01b0\u1eddng b\u1ebfp; b\u1ea3n L (low carbon) thu\u1eadn l\u1ee3i cho h\u00e0n, gi\u1ea3m nguy c\u01a1 \u0103n m\u00f2n v\u00f9ng nhi\u1ec7t.<br \/>\n&#8211; AISI 316\/316L: B\u1ed5 sung Mo, kh\u00e1ng r\u1ed7 pitting v\u00e0 clorua v\u01b0\u1ee3t tr\u1ed9i. Khuy\u1ebfn ngh\u1ecb cho m\u00f4i tr\u01b0\u1eddng m\u1eb7n\/\u1ea9m, g\u1ea7n bi\u1ec3n, khu v\u1ef1c d\u00f9ng dung d\u1ecbch ch\u1ee9a chlorides, b\u1ebfp h\u1ea3i s\u1ea3n, khu r\u1eeda c\u00f3 h\u00f3a ch\u1ea5t m\u1ea1nh.<br \/>\n&#8211; AISI 430 (ferritic): D\u00f9ng \u0111\u01b0\u1ee3c cho v\u1ecb tr\u00ed kh\u00f4ng tr\u1ef1c ti\u1ebfp ti\u1ebfp x\u00fac \u1ea9m\/h\u00f3a ch\u1ea5t (\u1ed1p trang tr\u00ed, c\u00e1nh t\u1ee7 kh\u00f4). Kh\u1ea3 n\u0103ng kh\u00e1ng \u0103n m\u00f2n k\u00e9m h\u01a1n 304; kh\u00f4ng khuy\u1ebfn ngh\u1ecb cho v\u00f9ng \u1ea9m, r\u1eeda, ch\u1ea3o l\u00f2 h\u01a1i n\u01b0\u1edbc.<br \/>\n&#8211; AISI 201: Kh\u00f4ng ph\u1ea3i m\u00e1c chu\u1ea9n cho th\u1ef1c ph\u1ea9m; Mn cao, kh\u00e1ng \u0103n m\u00f2n k\u00e9m h\u01a1n 304. Ch\u1ec9 xem x\u00e9t cho h\u1ea1ng m\u1ee5c phi ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m ho\u1eb7c kh\u00f4 r\u00e1o; c\u1ea7n h\u1ed3 s\u01a1 v\u1eadt li\u1ec7u v\u00e0 ki\u1ec3m so\u00e1t nghi\u00eam \u0111i\u1ec1u ki\u1ec7n s\u1eed d\u1ee5ng.<br \/>\n&#8211; Y\u00eau c\u1ea7u ch\u1ee9ng t\u1eeb: Y\u00eau c\u1ea7u nh\u00e0 cung c\u1ea5p cung c\u1ea5p ch\u1ee9ng ch\u1ec9 v\u1eadt li\u1ec7u theo EN 10204 (3.1), x\u00e1c nh\u1eadn m\u00e1c th\u00e9p v\u00e0 th\u00e0nh ph\u1ea7n; k\u00e8m tuy\u00ean b\u1ed1 ph\u00f9 h\u1ee3p FCM (v\u1eadt li\u1ec7u ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m).<\/p>\n<h3>Y\u00eau c\u1ea7u ho\u00e0n thi\u1ec7n b\u1ec1 m\u1eb7t v\u00e0 m\u1ed1i h\u00e0n<\/h3>\n<p>&#8211; \u0110\u1ed9 nh\u00e1m b\u1ec1 m\u1eb7t: Khuy\u1ebfn ngh\u1ecb Ra \u2264 0,8 \u03bcm cho v\u00f9ng ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m (tham chi\u1ebfu EHEDG\/3-A). V\u1edbi b\u1ec1 m\u1eb7t y\u00eau c\u1ea7u cao (s\u1eefa, b\u1ed9t nhuy\u1ec5n), c\u00f3 th\u1ec3 y\u00eau c\u1ea7u Ra \u2264 0,6 \u03bcm.<br \/>\n&#8211; Ki\u1ec3u ho\u00e0n thi\u1ec7n:<br \/>\n  &#8211; 2B\/BA: Ph\u00f9 h\u1ee3p \u0111a s\u1ed1 \u1ee9ng d\u1ee5ng, d\u1ec5 l\u00e0m s\u1ea1ch.<br \/>\n  &#8211; \u0110\u00e1nh x\u01b0\u1edbc No.4: T\u1ea1o x\u01b0\u1edbc d\u1ecdc c\u00f3 th\u1ec3 gi\u1eef b\u1ea9n; d\u00f9ng \u0111\u01b0\u1ee3c cho b\u1ec1 m\u1eb7t kh\u00f4ng ti\u1ebfp x\u00fac tr\u1ef1c ti\u1ebfp th\u1ef1c ph\u1ea9m ho\u1eb7c c\u1ea7n ki\u1ec3m so\u00e1t v\u1ec7 sinh ch\u1eb7t.<br \/>\n  &#8211; \u0110i\u1ec7n h\u00f3a b\u00f3ng (electropolish): C\u1ea3i thi\u1ec7n s\u1ea1ch b\u00f3ng, gi\u1ea3m b\u00e1m b\u1ea9n, t\u0103ng th\u1ee5 \u0111\u1ed9ng h\u00f3a \u2013 ph\u00f9 h\u1ee3p b\u1ed3n, \u1ed1ng CIP\/\u0111u\u1eddng s\u1eefa, khu high hygiene.<br \/>\n&#8211; M\u1ed1i h\u00e0n: Y\u00eau c\u1ea7u th\u00e2m nh\u1eadp \u0111\u1ea7y \u0111\u1ee7, m\u00e0i ph\u1eb3ng \u2013 li\u00ean t\u1ee5c v\u1edbi b\u1ec1 m\u1eb7t; t\u1ea9y g\u1ec9 &#038; th\u1ee5 \u0111\u1ed9ng h\u00f3a sau h\u00e0n (ASTM A967 ho\u1eb7c t\u01b0\u01a1ng \u0111\u01b0\u01a1ng). Tr\u00e1nh khe h\u1edf\/\u0111i\u1ec3m k\u1eb9t g\u00e2y t\u00edch t\u1ee5 th\u1ef1c ph\u1ea9m.<\/p>\n<h2 id=\"toc-2-thiet-ke-ve-sinh-hygienic-design-cho-thiet-bi-inox\">Thi\u1ebft k\u1ebf v\u1ec7 sinh (Hygienic Design) cho thi\u1ebft b\u1ecb Inox<\/h2>\n<p>&#8211; Tr\u00e1nh \u201c\u0111i\u1ec3m ch\u1ebft\u201d: Kh\u00f4ng \u0111\u1ec3 g\u00f3c nh\u1ecdn, khe, ren l\u1ed9 t\u1ea1i v\u00f9ng ti\u1ebfp x\u00fac s\u1ea3n ph\u1ea9m; b\u00e1n k\u00ednh bo g\u00f3c trong t\u1ed1i thi\u1ec3u \u2265 3 mm (t\u1ed1t h\u01a1n \u2265 6 mm \u1edf khu CIP).<br \/>\n&#8211; Tho\u00e1t n\u01b0\u1edbc t\u1ef1 do: B\u1ec1 m\u1eb7t ngang n\u00ean d\u1ed1c t\u1ed1i thi\u1ec3u 1\u20132% \u0111\u1ec3 tr\u00e1nh \u0111\u1ecdng n\u01b0\u1edbc. C\u00e1c b\u1ed3n, m\u00e1ng thi\u1ebft k\u1ebf x\u1ea3 ho\u00e0n to\u00e0n, kh\u00f4ng \u0111\u1ecdng c\u1eb7n.<br \/>\n&#8211; Li\u00ean k\u1ebft &#038; ph\u1ee5 ki\u1ec7n:<br \/>\n  &#8211; Kh\u00f4ng d\u00f9ng bul\u00f4ng\/\u0111ai \u1ed1c l\u1ed9 trong v\u00f9ng ti\u1ebfp x\u00fac; n\u1ebfu b\u1eaft bu\u1ed9c, d\u00f9ng chi ti\u1ebft \u201chygienic\u201d c\u00f3 n\u1eafp che v\u00e0 gio\u0103ng ph\u1eb3ng.<br \/>\n  &#8211; \u1ed0ng, ch\u00e2n \u0111\u1ebf r\u1ed7ng ph\u1ea3i b\u1ecbt k\u00edn hai \u0111\u1ea7u \u0111\u1ec3 tr\u00e1nh t\u1ee5 \u1ea9m.<br \/>\n  &#8211; Gio\u0103ng\/\u0111\u1ec7m: EPDM, PTFE, silicone c\u1ea5p th\u1ef1c ph\u1ea9m (NSF\/FDA\/EC), thi\u1ebft k\u1ebf x\u1ea3 s\u1ea1ch.<br \/>\n&#8211; D\u1ec5 th\u00e1o l\u1eafp &#038; v\u1ec7 sinh: C\u00e1c b\u1ed9 ph\u1eadn th\u00e1o r\u1eddi nhanh (quick-release), h\u1ea1n ch\u1ebf c\u00f4ng c\u1ee5 \u0111\u1eb7c bi\u1ec7t; tr\u00e1nh b\u1eaby ch\u1ea5t b\u1ea9n sau l\u1eafp l\u1ea1i.<br \/>\n&#8211; V\u1eadt li\u1ec7u h\u1ed7 tr\u1ee3: Tr\u00e1nh d\u00f9ng th\u00e9p carbon, b\u00e0n ch\u1ea3i th\u00e9p th\u01b0\u1eddng tr\u00ean b\u1ec1 m\u1eb7t Inox (nguy c\u01a1 nhi\u1ec5m s\u1eaft g\u00e2y g\u1ec9 n\u00e2u).<\/p>\n<h2 id=\"toc-3-van-hanh-ve-sinh-lam-sach-va-khu-trung-an-toan-cho\">V\u1eadn h\u00e0nh v\u1ec7 sinh: l\u00e0m s\u1ea1ch v\u00e0 kh\u1eed tr\u00f9ng an to\u00e0n cho Inox<\/h2>\n<p>&#8211; Ph\u01b0\u01a1ng ph\u00e1p:<br \/>\n  &#8211; COP\/Manual: Th\u00e1o r\u1eddi, ch\u00e0 r\u1eeda th\u1ee7 c\u00f4ng.<br \/>\n  &#8211; CIP (Clean-In-Place): Tu\u1ea7n ho\u00e0n dung d\u1ecbch t\u1ea9y r\u1eeda\/kh\u1eed tr\u00f9ng trong b\u1ed3n\/\u0111\u01b0\u1eddng \u1ed1ng; gi\u1ea3m thao t\u00e1c th\u1ee7 c\u00f4ng, \u1ed5n \u0111\u1ecbnh ch\u1ea5t l\u01b0\u1ee3ng v\u1ec7 sinh.<br \/>\n&#8211; Chu tr\u00ecnh c\u01a1 b\u1ea3n (tham kh\u1ea3o, \u0111i\u1ec1u ch\u1ec9nh theo b\u1ea9n\/th\u1ef1c t\u1ebf):<br \/>\n  1) Tr\u00e1ng s\u01a1 \u1ea5m 40\u201350\u00b0C \u0111\u1ec3 lo\u1ea1i b\u1ecf th\u00f4.<br \/>\n  2) R\u1eeda ki\u1ec1m 0,5\u20132% NaOH ho\u1eb7c ch\u1ea5t t\u1ea9y r\u1eeda ki\u1ec1m chuy\u00ean d\u1ee5ng 50\u201360\u00b0C \u0111\u1ec3 nh\u0169 h\u00f3a m\u1ee1.<br \/>\n  3) Tr\u00e1ng n\u01b0\u1edbc.<br \/>\n  4) T\u1ea9y c\u1eb7n kho\u00e1ng (n\u1ebfu c\u1ea7n): Acid nh\u1eb9 (citric\/nitric) theo khuy\u1ebfn c\u00e1o nh\u00e0 h\u00f3a ch\u1ea5t.<br \/>\n  5) Kh\u1eed tr\u00f9ng: Peracetic acid (PAA) ho\u1eb7c h\u1ee3p ch\u1ea5t amoni b\u1eadc b\u1ed1n theo n\u1ed3ng \u0111\u1ed9 nh\u00e0 s\u1ea3n xu\u1ea5t. Tr\u00e1nh d\u00f9ng hypochlorite n\u1ed3ng \u0111\u1ed9 cao v\u00e0\/ho\u1eb7c th\u1eddi gian d\u00e0i tr\u00ean 304 v\u00ec nguy c\u01a1 pitting do chloride.<br \/>\n  6) Tr\u00e1ng cu\u1ed1i (n\u1ebfu d\u00f9ng h\u00f3a ch\u1ea5t y\u00eau c\u1ea7u tr\u00e1ng) v\u00e0 l\u00e0m kh\u00f4.<br \/>\n&#8211; L\u01b0u \u00fd quan tr\u1ecdng:<br \/>\n  &#8211; Clo\/chloride: H\u1ea1n ch\u1ebf ti\u1ebfp x\u00fac k\u00e9o d\u00e0i; r\u1eeda s\u1ea1ch sau khi d\u00f9ng ch\u1ea5t c\u00f3 chloride.
