Quy \u0111\u1ecbnh y\u00eau c\u1ea7u an to\u00e0n v\u00e0 ph\u01b0\u01a1ng ph\u00e1p th\u1eed di tr\u00fa kim lo\u1ea1i t\u1eeb v\u1eadt li\u1ec7u kim lo\u1ea1i v\u00e0o th\u1ef1c ph\u1ea9m ho\u1eb7c ch\u1ea5t m\u00f4 ph\u1ecfng.<br \/>\n  &#8211; Ngh\u1ecb \u0111\u1ecbnh 15\/2018\/N\u0110-CP: Quy \u0111\u1ecbnh th\u1ee7 t\u1ee5c t\u1ef1 c\u00f4ng b\u1ed1 \u0111\u1ed1i v\u1edbi v\u1eadt li\u1ec7u, d\u1ee5ng c\u1ee5 ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m; h\u1ed3 s\u01a1 ch\u1ee9ng minh ph\u00f9 h\u1ee3p quy chu\u1ea9n\/ti\u00eau chu\u1ea9n t\u01b0\u01a1ng \u1ee9ng.<br \/>\n  &#8211; H\u1ec7 th\u1ed1ng qu\u1ea3n l\u00fd an to\u00e0n th\u1ef1c ph\u1ea9m: HACCP\/Codex, ISO 22000 th\u01b0\u1eddng \u0111\u01b0\u1ee3c c\u01a1 s\u1edf ch\u1ebf bi\u1ebfn v\u00e0 b\u1ebfp c\u00f4ng nghi\u1ec7p \u00e1p d\u1ee5ng \u0111\u1ec3 ki\u1ec3m so\u00e1t r\u1ee7i ro.<br \/>\n&#8211; Tham chi\u1ebfu qu\u1ed1c t\u1ebf (gi\u00fap n\u00e2ng m\u1ee9c an to\u00e0n v\u00e0 d\u1ec5 th\u1ea9m \u0111\u1ecbnh):<br \/>\n  &#8211; Council of Europe Resolution CM\/Res(2013)9: H\u01b0\u1edbng d\u1eabn kim lo\u1ea1i &#038; h\u1ee3p kim d\u00f9ng l\u00e0m v\u1eadt li\u1ec7u ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m, bao g\u1ed3m gi\u1edbi h\u1ea1n di tr\u00fa c\u1ee5 th\u1ec3 v\u00e0 \u0111i\u1ec1u ki\u1ec7n th\u1eed nghi\u1ec7m v\u1edbi ch\u1ea5t m\u00f4 ph\u1ecfng.<br \/>\n  &#8211; NSF\/ANSI 51 (Food Equipment Materials) v\u00e0 NSF\/ANSI 2 (Food Equipment): Y\u00eau c\u1ea7u \u0111\u1ed1i v\u1edbi v\u1eadt li\u1ec7u v\u00e0 thi\u1ebft k\u1ebf, ho\u00e0n thi\u1ec7n b\u1ec1 m\u1eb7t, kh\u1ea3 n\u0103ng l\u00e0m s\u1ea1ch cho thi\u1ebft b\u1ecb ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m.<br \/>\n  &#8211; EHEDG Guidelines, EN 1672-2 v\u00e0 ISO 14159: Y\u00eau c\u1ea7u thi\u1ebft k\u1ebf v\u1ec7 sinh cho m\u00e1y\/thi\u1ebft b\u1ecb ch\u1ebf bi\u1ebfn th\u1ef1c ph\u1ea9m, lo\u1ea1i b\u1ecf \u0111i\u1ec3m b\u1ea9n t\u00edch t\u1ee5, d\u1ec5 v\u1ec7 sinh, kh\u00f4ng k\u1ebd h\u1edf.<br \/>\n  &#8211; 3-A Sanitary Standards: Chu\u1ea9n ng\u00e0nh (\u0111\u1eb7c bi\u1ec7t s\u1eefa\u2013\u0111\u1ed3 u\u1ed1ng) v\u1ec1 b\u1ec1 m\u1eb7t, m\u1ed1i h\u00e0n, tho\u00e1t n\u01b0\u1edbc, chi ti\u1ebft ti\u1ebfp x\u00fac th\u1ef1c ph\u1ea9m.<\/p>\n<p>G\u1ee3i \u00fd th\u1ef1c h\u00e0nh: Do c\u00e1c b\u1ebfp c\u00f4ng nghi\u1ec7p ph\u1ee5c v\u1ee5 chu\u1ed7i\/kh\u00e1ch s\u1ea1n th\u01b0\u1eddng ph\u1ea3i qua th\u1ea9m \u0111\u1ecbnh c\u1ee7a kh\u00e1ch h\u00e0ng ho\u1eb7c b\u00ean th\u1ee9 ba, k\u1ebft h\u1ee3p tu\u00e2n th\u1ee7 QCVN 12-3:2011\/BYT v\u1edbi NSF\/ANSI 2, 51 ho\u1eb7c h\u01b0\u1edbng d\u1eabn EHEDG s\u1ebd gi\u00fap h\u1ed3 s\u01a1 \u0111\u1ea1t y\u00eau c\u1ea7u nhanh h\u01a1n.<\/p>\n<h2 id=\"toc-1-yeu-cau-vat-lieu-inox-an-toan-thuc-pham\">Y\u00eau c\u1ea7u v\u1eadt li\u1ec7u inox an to\u00e0n th\u1ef1c ph\u1ea9m<\/h2>\n<h3>Ch\u1ecdn m\u00e1c th\u00e9p \u0111\u00fang m\u00f4i tr\u01b0\u1eddng s\u1eed d\u1ee5ng<\/h3>\n<p>&#8211; Inox 304\/304L (EN 1.4301\/1.4307): L\u1ef1a ch\u1ecdn ti\u00eau chu\u1ea9n cho m\u1eb7t b\u00e0n, ch\u1eadu r\u1eeda, k\u1ec7, n\u1ed3i, t\u1ee7 h\u00e2m, b\u1ed3n tr\u1ed9n\u2026 trong m\u00f4i tr\u01b0\u1eddng b\u1ebfp th\u00f4ng d\u1ee5ng. Kh\u00e1ng \u0103n m\u00f2n t\u1ed1t, d\u1ec5 gia c\u00f4ng, \u1ed5n \u0111\u1ecbnh trong \u0111a s\u1ed1 th\u1ef1c ph\u1ea9m.<br \/>\n&#8211; Inox 316\/316L (EN 1.4401\/1.4404): B\u1eaft bu\u1ed9c\/\u01b0u ti\u00ean cho m\u00f4i tr\u01b0\u1eddng c\u00f3 chlorua cao (n\u01b0\u1edbc m\u1eafm, h\u1ea3i s\u1ea3n, mu\u1ed1i), ch\u1ea5t t\u1ea9y r\u1eeda m\u1ea1nh\/ nhi\u1ec7t cao, ven bi\u1ec3n. H\u00e0m l\u01b0\u1ee3ng Mo t\u0103ng kh\u00e1ng r\u1ed7 pitting v\u00e0 n\u1ee9t SCC.<br \/>\n&#8211; Inox 430 (ferritic) ho\u1eb7c 201: Ch\u1ec9 n\u00ean d\u00f9ng cho chi ti\u1ebft kh\u00f4ng ti\u1ebfp x\u00fac tr\u1ef1c ti\u1ebfp th\u1ef1c ph\u1ea9m (\u1ed1p trang tr\u00ed, v\u1ecf t\u1ee7), ho\u1eb7c khu v\u1ef1c kh\u00f4.
